Polish Horseradish Sauce (Sos Chrzanowy) is something you can make on the fly right before serving or in advance to have on hand for your Easter breakfast and all those lovely leftover snacks.
This sauce goes very well with both hot and cold dishes such as hard-boiled eggs, roasted pork or beef, and Polish kielbasa. Polish Horseradish sauce on a sandwich of cold roast pork on a thick slice of Polish bread is my idea of snack perfection.

Clean your horseradish root. Peel and grate. Alternatively, buy a jar of grated horseradish.
Next, mix the sour cream, mayonnaise, vinegar, salt and pepper in a bowl.
After that add the grated horseradish. Do a taste test and adjust the ingredients accordingly.
If you are using fresh horseradish, be sure to grate it fine. Be prepared for some horseradish tears.
If you are using prepared horseradish, give it a taste first as some producers add vinegar in the canning and you might not need any in your sauce.
We like a spicy sauce, but if you prefer something milder, just change up your horseradish/cream ratio - reduce the amount of horseradish and up the cream and mayo.
I like my Polish style Horseradish Sauce a little bit sour, so sometimes I add an extra splash of vinegar just for me. Now's the time to add in the optional sugar for those who prefer a sweet sauce.
