Cauliflower and Corn Salad

If you are in need of a quick salad or cold side dish, this Cauliflower and Corn Salad is just right for you. I learned this easy recipe from a Polish student of mine, back when I was pregnant and hungry for everything crunchy! It's delicious and crunch and ready to eat in under 10 minutes.  1 head of cauliflower
 1 can of corn
 ¾ cup mayonnaise
 ½ cup yogurt (white, plain, or greek)
 ½ tsp white vinegar
 1 tbsp sugar
 salt and pepper to taste
 1 tsp herbs, fresh or dried (any or all of the following - parsley, chives, dill, lovage, marjoram, thyme, savory, tarragon)

Mix the yogurt, mayonnaise, vinegar, sugar, salt and pepper, and herbs in a large bowl to create the dressing. Give it a taste and adjust your ingredients to your taste. If you like a sweeter dressing, add some more sugar, If you like a more sour dressing (especially with something sweet such as corn), add a little bit more vinegar. Let the dressing sit and stir again before adding the vegetables. This ensures that the sugar is fully dissolved.

I like to use a pre-packaged dried herb mix aptly named - Herbs of the Polish Kitchen. It includes parsley, chives, dill, lovage, marjoram, thyme, savory, and tarragon. Sometimes I make the salad with dill only. Choose the herbs you like best. I'm sure it will be tasty.

Rinse and chop the head of cauliflower into bite-sized pieces and add to the dressing. Drain the corn and add to the dressing. Mix everything up and there you have it - Cauliflower and Corn Salad in under 10 minutes.

    Tried it yesterday – I usually make it with chopped tomatoes instead of corn, but I liked the corn version, sweet and crunchy. Thanks!

        i dont have any yogurt so I am going to make it with sour cream instead. I would love to find that specific herb pack though.
